How to choose the right pressure cooker

01Electric vs stovetop: which is better?

Electric pressure cookers (Instant Pot, Ninja Foodi) are set-and-forget appliances with programmable timers, safety sensors, and one-touch programs. Stovetop models (Presto) are rated for higher pressure, 15 PSI against 11 to 12 PSI, which shortens cook times, but they require manual heat monitoring.

For most home cooks, electric is the better choice. The Instant Pot Duo runs beans, rice, and pulled pork to a program with no monitoring at all. The Presto gets there faster on the strength of its higher rated pressure, but it needs constant heat adjustment. Choose stovetop only if you want maximum control and the shortest cook times.

02Capacity: what size do you need?

Pressure cooker capacity ranges from 3 quarts (1-2 people) to 8 quarts (8+ people). The Instant Pot Duo 6-quart feeds 4-6 people, the sweet spot for most households. The Ninja Foodi 8-quart handles large roasts and batch cooking for meal prep. The 3-quart Instant Pot Mini is best for singles or RVs.

Never fill a pressure cooker more than 2/3 full (1/2 full for foamy foods like beans). A 6-quart cooker realistically holds 4 quarts of food. If you regularly cook for 6+ people or batch cook for meal prep, the 8-quart Ninja Foodi is worth the step up in price.

Skip Wi-Fi unless you specifically want to monitor cooking from another room. The Duo carries almost every practical feature the Pro Plus does, for less money. Put the difference into accessories: a steamer basket, or a tempered glass lid.

The remaining risk is user error: opening the lid before pressure releases. Use natural release for 10 minutes before quick release. Stovetop models need more attention, and the Presto 01362 relies on a mechanical pressure regulator to prevent over-pressurization.

A pressure cooker raises the boiling point of water, so food cooks hotter and finishes far sooner than it would on a stovetop or in an oven.
